Classic Shoyu Ramen with Ayuko Soy Sauce & Mirin
A warm bowl of comfort, this ramen brings together a rich, savoury broth, tender fresh noodles, and vibrant toppings. The umami depth of Ayuko soy sauce and the gentle sweetness of mirin give this dish its signature, full-bodied flavour.
Ingredients (serves 2):
- 1 pack Ayuko fresh ramen noodles (200g)
- 600 ml chicken or vegetable broth
- 2 tbsp Ayuko soy sauce (or low-sodium version)
- 1 tbsp Ayuko mirin
- 1 garlic clove, finely chopped
- 1 small piece of fresh ginger (2 cm), finely chopped
- 1 spring onion, finely sliced
- 2 soft-boiled eggs
- Optional toppings: nori, sweetcorn, shiitake mushrooms, bamboo shoots
Preparation:
- In a medium pot, bring the broth to a boil. Add the chopped garlic and ginger, and let simmer for 5 minutes to infuse the flavours.
- Stir in the Ayuko soy sauce and mirin. Taste and adjust seasoning if needed. Keep the broth warm on low heat.
- Cook the ramen noodles according to package instructions (typically 2–3 minutes). Drain and divide between two bowls.
- Pour the hot broth over the noodles. Top with spring onions, halved soft-boiled eggs, and your choice of toppings like nori or shiitake.
- Serve immediately and enjoy a nourishing, flavour-packed meal.
