Classic Shoyu Ramen with Ayuko Soy Sauce & Mirin

A warm bowl of comfort, this ramen brings together a rich, savoury broth, tender fresh noodles, and vibrant toppings. The umami depth of Ayuko soy sauce and the gentle sweetness of mirin give this dish its signature, full-bodied flavour.

Ingredients (serves 2):

  • 1 pack Ayuko fresh ramen noodles (200g)
  • 600 ml chicken or vegetable broth
  • 2 tbsp Ayuko soy sauce (or low-sodium version)
  • 1 tbsp Ayuko mirin
  • 1 garlic clove, finely chopped
  • 1 small piece of fresh ginger (2 cm), finely chopped
  • 1 spring onion, finely sliced
  • 2 soft-boiled eggs
  • Optional toppings: nori, sweetcorn, shiitake mushrooms, bamboo shoots

Preparation:

  1. In a medium pot, bring the broth to a boil. Add the chopped garlic and ginger, and let simmer for 5 minutes to infuse the flavours.
  2. Stir in the Ayuko soy sauce and mirin. Taste and adjust seasoning if needed. Keep the broth warm on low heat.
  3. Cook the ramen noodles according to package instructions (typically 2–3 minutes). Drain and divide between two bowls.
  4. Pour the hot broth over the noodles. Top with spring onions, halved soft-boiled eggs, and your choice of toppings like nori or shiitake.
  5. Serve immediately and enjoy a nourishing, flavour-packed meal.
